Any Eggs'cuse


Ok so the healthy breakfasts were exactly what was needed for the first couple of weeks of the year. But come on ... I'm no saint. A girl cannot survive on granola alone you know. One morning you wake up and all you want are baked eggs.

You have the cutest little pots that are just perfect for baking eggs. You also happen to have some delicious baked ham and some Jarlsberg Cheese in the fridge. These are just calling out to be combined, baked in a hot oven and then enjoyed in bed with a strong coffee.

Baked Eggs


Serves 2

5 Eggs
1 tblsp Brandy
1 tblsp Cream
2 slices of thick bread
20g Jarlsberg Cheese
2 Slices of Ham


1. Heat the oven to 180C. Butter 2 baking pots
2. In a bowl mix 1 egg, cream and brandy. Cut a round from each of the slices of bread that will fit in the base of the baking pot. Soak the bread in the egg mixture for 5 to 10 mins
3. Put the ham in the base of the baking pot. On top of the ham place the bread round and then grate the cheese on top. Crack two eggs into each cooking pot.
4. Cook for about 15 mins or until the egg whites are cooked through.
5. Serve with lots of cracked pepper, some strong coffee and a very happy smile
